Paleo Meatballs

Here’s one of my recipes.

  • 1lb ground beef
  • 1lb ground pork or turkey
  • 1 egg + 1 egg yolk
  • 1/2 t cayenne
  • 1/2 t garlic
  • 1/2 t thyme
  • 1/2 t salt and pepper
  • 1t oregano
  • 1/2 onion chopped finely or grated
  • (Gluten free)

My secret ingredient is a teaspoon of spicy mustard. Form into balls – tip: use an ice cream scoop to get uniform sizes. Bake on a lightly greased pan at 400 degrees for 15 mins, then reduce heat to 350 for another 10 mins.

Makes 2oz meatballs. Easily freezable before or after cooking.

I love how versatile this meatball is – I’ve  finished them with Thai peanut sauce, BBQ sauce, and perhaps everyone’s favorite … classic spaghetti and meatballs.  Enjoy!
