Homemade granola bars

When Andy and I first got married, I made a lot of diy snacks- as life has gotten busier I have had to go store bought on several items, but these are quick and easy so I have kept them in my routine! I love mixing it up by adding random mix-ins or chocolate or vanilla protein powder. They are also a nice healthier sweet treat and you can be picky about the ingredients going in if you want.

Ingredients:
2 cup oats
½ cup honey
½ cup peanut butter (can be sweetened or not)
½ cup dried fruit
1 egg (can substitute ¼ to ½ cup of applesauce to make vegan)
1 tsp vanilla extract
1 tsp almond extract (optional)
Cinnamon to taste

Separate mixture into liners in a muffin tin, bake at 325 F for approx. 15 mins., till the top just starts to brown.
**You can also add a scoop of protein powder, flax seed, or other mix ins as you like! I use the above as a base and play with it from there.
